Can you believe it's already February?!? 2012 is well under way and things are heating up at Southbridge Golf Club...not that they ever really cooled down. Right now we are having a sale on all of our Winter Apparel(from35 to 50% OFF).

The new Smga and Interclub Challenge Match schedules are up. To inquire about the dates of this year's events just stop in the proshop are call us at 912.651.5455.

If anyone is looking to tune up their game for the upcoming year please ask Gordon and Stan about any game improvement clinics or individual lessons.

Vickey's is hosting a dinner on Friday, February 24th. The dinner will be 4 course and the menu consists of the following: 1) New York Strip and Broiled Lobster Tail $35.95, 2) Salmon Oscar $29.95, 3) Bacon Wrapped Pork Tenderloin $24.95. All dinners include your choice of French Onion Soup or Tomato Basil Bisque, House or Ceasar Salad, and Chambord and White Creme Brulee or Flourless Chocolate Forte. Mention that you read about the Friday Night Dinner on this website and receive one(1) complimentary glass of house wine, OR one(1) draft beer.

Tips from the kitchen

Sweet Potato Souffle

Ingredients:

3 cups mashed sweet potatoes

3/4 cup white sugar

1/3 cup butter, softened

2 eggs

1 teaspoon vanilla extract

1/2 cup milk

1 cup flaked coconut

1/3 cup all-purpose flour

1 cup packed brown sugar

1 cup chopped walnuts

1/3 cup melted butter

Directions:

1. Preheat oven to 350 degrees F

2. Combine the mashed sweet potatoes with the white sugar, soft butter or margarine, beaten eggs, vanilla and milk. Spoon into a 2 quart oven proof baking dish.

3. Combine the coconut, flour, brown sugar, chopped nuts and melted butter. Sprinkle over the top of the sweet potatoes.

4. Bake at 350 degrees F for 30 to 35 minutes
